Autumn Inspired Recipes

Impress your family with a new recipe that uses fall fruits and vegetables.

Sweet Potato Soup

Ingredients:

  • 3 large sweet potatoes, baked until soft and peeled
  • 3 – 14 oz cans chicken broth
  • ¼ cup brown sugar
  • ½ tsp salt
  • ¼ tsp nutmeg
  • black pepper (to taste)
  • 1/3 cup heavy cream

Puree sweet potatoes with chicken broth until smooth. Place in a large saucepan over medium-high heat and bring to a boil. Reduce heat to medium-low. Add sugar and spices. Cook covered for 15 minutes. Remove from heat, and stir in cream.

Cranberry Pumpkin Muffins

Ingredients:

  • 2-1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups sugar
  • 1 cup canned pumpkin
  • 1/2 cup oil
  • 1 cup cranberries, chopped

Combine the dry ingredients in a mixing bowl. In a separate bowl, beat together the eggs and sugar; add the pumpkin and oil, mixing well. Stir into the dry ingredients just until moistened. Fold in the cranberries. Scoop batter into muffin cups and bake at 400° for 18-22 minutes.

Round 4: Knockout Cancer for Candlelighters Kids

One of the biggest events around to help fight cancer is the Round 4: Knock Out Cancer For Candlelighters Kids. This is an annual event that helps sponsor local cancer charity Candlelighters Kids. This MMA event will be held this year on October, 3rd at 7:00 pm at the arena in the Orleans resort and casino.

MMA or Mixed Martial Arts superstars will show off their skills and help earn money to support childhood cancer research. This is a much-anticipated event among MMA participants as well as those who come out and support the charity and the fighters.

23rd Annual 5k & 1 Mile Race for Our Kids

On September 14, 2013, we once again sponsored the Candlelighters’ 23rd Annual 5k & 1 Mile Race. The event was hosted by Chet Buchanan at Mountains Edge Exploration Park in Las Vegas. The Race for Our Kids helps raise critically needed funds to support children with cancer and their families and generate awareness of childhood cancer’s impact in the community. The event is organized by the non-profit organization, Candlelighters Childhood Cancer Foundation of Nevada.
