Barbecue season is well under way. If you’re looking for an exciting and healthy recipe to impress your friends or family at your next BBQ, try one of the following ideas.
Pork Kabobs
Alternate slices of marinated pork with your favorite summer veggies on a skewer. Zucchini, eggplant, and peppers are just a few of the many possibilities. Cook on a pre-heated grill for about 4 minutes per side. (Substitute chicken, shrimp or turkey for the pork.)
Grilled Sausage Pasta Salad
Prepare one pound of pasta according to package directions. Slice one bell pepper, one medium zucchini and one red onion. Place in a grilling basket on a preheated BBQ with one pound of turkey sausage (hot or sweet), When done, cut veggies and sausage into bite sized pieces and add to pasta. Mix together 5 tablespoons of olive oil with 6 tablespoons of balsamic or red wine vinegar and blend well. Pour dressing over pasta and toss to coat thoroughly. Serve warm or at room temperature.

Knockout Cancer for Candlelighters Kids is a program to raise funding and awareness for children with cancer. It involves over a dozen amateur MMA bouts and is held by the organization known as Candlelighters Kids. Candlelighters Kids is the childhood cancer foundation of Nevada, which offers a comprehensive set of programs and services for children with cancer and their families. These services include helping children travel for their treatment programs and a medical expense assistant program. All of these programs need funds, and Knockout Cancer for Candlelighters Kids is one way that they can achieve these funds.
