What better way to celebrate Easter than gathering your community together for a brunch? To take your meal to the next level, it is important to have a recipe that will wow your friends and family. To help, here is an easy, five ingredient recipe for grilled lamb that will be as fun to eat as it is to make.

Chef’s Tip: Leave ample time for this recipe, as it requires four hours to marinate.

To make this Easter lamb, you will need:

  • A 4 or 5 pound boneless leg of lamb
  • ¼ cup of extra-virgin olive oil
  • 8 garlic cloves, coarsely chopped
  • 2 tablespoons of rosemary, minced
  • Salt and pepper

This recipe is a departure from the traditional method of butterflying the lamb on the bone and cooking it whole. Instead, cut along the muscle separations and pull the pieces apart with your fingers. This will ensure that the lamb cooks evenly. Also, cut away gristle and excess fat.

In a dish large enough to fit the lamb, stir together the olive oil, garlic, and rosemary. Add the lamb and coat it with the mixture. Leave it to marinate for four hours at room temperature, turning it occasionally.

Heat your grill. Leaving the garlic and rosemary on the lamb, season it with salt and pepper. Grill the lamb, turning regularly until your meat thermometer reads 125 to 130 degrees Fahrenheit (medium rare) when inserted into each piece. Grilling time will vary by weight, but plan for a 1 ½ pound section to need about 20 minutes to reach medium rare.

Let the lamb rest on the carving board for 15 minutes before slicing thinly. Enjoy!
